The Microsoft CRM 3.0 SDK includes a live metadata browser. This replaces the static browser built into previous versions of the SDK. The live metadata browser is found here:

http://<yourservername>/sdk/list.aspx

You can use this to view the definition and XSD schemas for all entities and attributes in the system, both core and custom.
